I was watching Nigella's Christmas special last holiday season, and saw her make a fantastic chocolate fruit cake. I immediately decided I had to make a version of it as my own Christmas cake this year. One Bowl Chocolate Fruit Cake is two layers of chocolate cake, separated with homemade whipped cream and topped with more whipped cream and fresh fruit. And, the cake batter is all combined in one bowl, which makes this cake as easy to make as it is delicious and beautiful!

Chocolate Fruit Cake step by step

  1. Prehead oven to 150°C Line cake tin with baking parchment strips.
  2. Place fruit, butter, sugar, honey, coffee liqueuer, orange zest & juice, mixed spice and cocoa into a large wide saucepan. Heat until reaching a gentle boil, stirring the mixture as the butter melts. Allow to simmer for 10 mins. Leave to cool for 30 mins..
  3. Add eggs, flour, ground almonds, baking powder & baking soda. Mix well with spatula until ingredients have combined..
  4. Mix in coffee liqueur.
  5. Carefully pour into tin. Do not overfill - rises quite a bit.Bake for 105 to 120 minutes or until the top of the cake is firm & has a shiny, sticky look. Inserting a sharp knife into the cake, should reveal a slightly undercooked middle!.
